Sweet and Savory Galettes

Sweet and Savory Galettes
Learn how to make what everyone fears the most—the crust—which is the base for making your galettes. Then we’ll make sweet and savory fillings for this rustic form of a pie that’s fit for a cocktail party, lunch, or dessert table.

Class Registration and Cancellation Policies
All classes include materials and the finished products from class. Classes are held at the bakery unless noted and run for the allotted time; please note some classes may go slightly over or under the specified timeframe depending on the number of students and their experience which can set the pace of the class. Space is limited so early registration is the best way to secure a place in class.
Classes are FINAL sale and must be paid in full at the time of booking. If a class is cancelled due to lack of enrollment you may request a refund or credit toward another comparable class at a later date. Unfortunately, we are unable to issue a refund if you must cancel for any reason. We will, however, issue a refund if we are able to fill your seat.
Please wear non-skid, closed-toe shoes to class.

How it works
Our class schedule is created based on availability of our instructors and current enrollment. We offer as many classes as we can comfortably teach. When classes fill up, we schedule more. Sessions are typically available 1 to 3 months in advance. Classes involve a lot of prep for our team; the (above) selection of upcoming classes is everything we currently have available. We do not add classes to our calendar by request.
Classes are not offered during major holidays and holiday weekends. To keep workload manageable for our team, we do take breaks during busy times of year, employee vacations, and other commitments. Subscribe to our email list to receive the latest updates.

Frequently Asked questions
Will you be adding more classes? Yes, we teach year-round.
When is the next High Tea? High Tea is offered in the off-season months, September through June.
When is the next Paint and Sip? Taught by local artist Karen Scata, we offer Paint and Sip when Karen is available. We recommend subscribing to our email list.
When are you teaching [a specific class] again? Everything we know we’re teaching, we publish to the website. If it’s not available above, we are unable to commit to a date at this time. Check back soon!
How do I sign up for class? Click on a class (above) to see available tickets. Add tickets to the Cart and fill out Student Information. A Shopping Cart will appear on your screen; please click on the shopping cart to Checkout.
Can I bring my child? While we love kids, our classes are not suitable for children. The age requirement for classes is 16+ unless otherwise specified. 16- and 17-year old students must be enrolled with a parent or guardian, and all participants must have their own ticket. We offer age-appropriate Kids and Teens classes occasionally. You’re welcome to sign up to receive notifications for Kids Classes.
Can I bring someone to observe? Our space is limited, we cannot accommodate anyone who would like to observe. Tickets are required to attend.
Can I give a class as a gift? Classes are a great gift! We recommend purchasing an AMIE Académie gift card. Your gift card recipient can select a class they’d enjoy on a date that works for them.
I bought tickets to class. What do I do now? Excellent question! Check your inbox for a confirmation email and order number—if you have an order number, you’re good to go! If you don’t see the charge on your credit card and a confirmation email, please contact us. Before class, we will send arrival instructions. If you have previously unsubscribed from our mailing list, our emails may not be delivered.
What should I wear? What should I bring? Before class, we’ll send you an email with helpful information. Attire is casual, please wear closed-toes shoes. Expect to be on your feet, we recommend comfortable and supportive footwear, sneakers are recommended. There is no need to print a copy of your order confirmation: if you have received emails from us, we’ll know you’re coming. Please bring with you any necessary eyeglasses or hearing aids. Other attendees may have allergies; outside food and beverage is not permitted.
What other classes do you offer? How do you choose what to teach? We have created many different classes, and we workshop everything we do. Creating a hands-on class involves recipe testing, considering demonstration time, student work time, resting, baking, cooling, one-on-one guidance with students, and other factors. Every class is different. After a class, our chefs review and make changes if there’s a way to improve. We are grateful to our community of active and returning students; we listen to your praise, constructive feedback, encouragement, and requests made in the classroom. Our audience is looking for practicality: people want to learn recipes applicable to everyday life, that they’ll make again for their loved ones. We also consider content based on season and time of year, thought and care goes into every decision. The most popular classes are taught most often. If you see something you like, join in on the fun! The best way to let us know you’re interested is to sign up. There’s limits to how often we can teach, and we can best determine what our students want by the ticket sales. When class is canceled due to lack of enrollment, we are less likely to offer that session for a while.
Do you take requests? We’re happy to hear your suggestions, but we don’t create classes by request. Not all ideas are feasible and sensible. For example, a croissant class is highly requested, but croissant dough requires hours of chilling time. The croissants we sell here at the bakery are a multi-day process. We’re glad you love croissants, and an interested student may not be aware of these details when requesting a class topic. The culinary world is endless and exciting! Thank you for your enthusiasm, we always share it with the team, even if the request isn’t going to happen. Our classes are for recreation, we welcome you to join on the fun—the content we teach make for great classes and delicious finished products.
Student Conduct
While classes are recreational and lots of fun, we take student conduct seriously. Safety and respect for all students, staff, equipment, and AMIE Bakery premises is our top priority. Equipment may be sharp, hot, fast-moving, or unsuitable for some students. We reserve the right to dismiss any student that displays behavior that may endanger others or themselves. Our instructors are working hard to provide a positive experience for attendees: disruptive behavior will not be tolerated. We are here to help; if you need instructions repeated or guidance with any task, please ask.
We incur a great deal of risk offering classes, and these sessions are a significant commitment for our team. Students have purchased tickets in good faith that the experience will meet expectations. Many attendees have taken time away from jobs and commitments, arranged childcare, or commuted long distances to attend. We strive to be respectful of your time and make the experience positive. Thank you for your consideration and respect for our team, our bakery, and other attendees.

Private classes
We offer private classes if an instructor is available to teach: we are not able to accommodate every request, but please ask. Private classes are a notable addition to our scheduled workload and incur venue rental fees in addition to ticket price per student. A private event allows a group to gather for an exclusive celebration on a date that works for all, for a class of their choosing.
Private classes typically cost between $1000 and $2400 depending on number of students, class content, and optional alcohol package. We recommend a minimum of 6 people for a private session, and can comfortably host up to 12. To receive an estimate from our team, please contact us with a few available dates that work for your group, the number of students, and the class you’d like us to teach.
Our team will check availability and see if we can fit your party into our production schedule. Our Private Class Catalog contains class content options and additional information about AMIE Académie. Thank you for considering us to host your special occasion. In the event that a private class is not possible, we welcome larger groups to sign up for our regularly scheduled classes—many attendees celebrate birthdays, anniversaries, and other milestones in the classroom. We’re happy to recommend an upcoming session that has enough seats available.

ABOUT AMIE ACADEMIE
There is an unfounded mystique about baking. Since the AMIE brand was conceived a decade ago, our mission at AMIE Académie has been to demystify scratch baking and help instill confidence in anyone who wants to bake. Inspired by attending a variety of recreational and professional classes around the world, Chef Amie gleaned best practices and honed in on what makes the experience worthwhile. Our talented instructors guide students with a combination of hands-on experience and demonstrations that inevitably evoke “Aha!” moments. We strive to create a place for friends and neighbors to gather, celebrate special occasions, refine skills and techniques, and enjoy delicious food in good company.
The Académie brings together locals and travelers alike to learn and share in the kitchen. Many students meet, become friends, and return to the Académie together. One of our favorite memories was having guests arrive in the kitchen for class and two attendees recognized each other from playing high school football together decades ago. Many students have discovered talent, passion, and the joys of baking—we even discovered one of our gifted cake decorators while she was doing piping work in a class. In food, there is endless room for growth and discovery. The Académie is also a conduit for sharing how we do things at AMIE Bakery. Teaching connects with customers and provides a way to engage the Cape Cod community and beyond.
AMIE Académie has hosted prestigious chefs from across the country, including Executive Chef Laura Briscoe, Executive Pastry Chef Gale Gand, and local Executive Chef James Dings to name a few. Chef Amie Smith first began teaching recreationally in 2018, hosting small private events and workshops within the community. As of 2024, over 2,000 guests have attended recreational cooking and baking classes and themed special events at AMIE Académie.
Académie classes are recreational, drawing curious newbies and industry professionals to participate. Students collaborate in small groups to create an intimate experience that fosters getting to know those alongside you. While many large parties participate, plenty of students fly solo. The class setting is also an opportunity to address pitfalls and teach troubleshooting, so obstacles are easily overcome at home. We strive to encourage and show our students that baking is a balance between science and art.
Whether you're an avid baker or a beginner, we invite you to join us for classes at AMIE Académie. For policy information, visit our FAQ page. Hear what our graduates are saying, and discover our photo gallery. Full class descriptions, photography, and information can be found on each class page by selecting a session listed above.
“My mission is to educate our customers about what authentic pastry looks and tastes like. If you haven’t tasted scratch-made pastry cream you probably think the vanilla pudding you’re buying is delicious. Once you taste the real thing, you can’t go back. And it’s easy to make. One key to loving pastry is realizing it’s not complicated to make. ”
